10-12 prawns
Marinade
1/4 cup lemon juice
1/2 teaspoon salt
1-1/2 teaspoon curry powder
1/4 teaspoon ginger
1 tablespoon soyu sauce
Remove shell from prawns, leaving tail connected to head and split meat
open from back. Marinate prawns for 1 hour in lemon juice, salt, and curry
powder, ginger and soyu.
Batter
2 cups flour
1-1/3 cup milk
2 teaspoons baking powder
After removing prawns, add remaining marinade to batter ingredients and
mix well. Coat prawns w/flour, dip in batter, then roll in shaved or shredded
coconut. Deep fry in hot oil (375 degrees F). Serve with cocktail sauce.
Yeild: 4 servings.
